Zucchini Bake

Zucchini Bake

3 Cups grated zucchini

1/2 Cup chopped Italian parsley

1/2 Cup chopped onion

1 Clove garlic minced

1 Cup Bisquick

1/2 Cup Oil ( I use Olive oil)

1/2 Cup Parmesan cheese ( I have used fresh and the type in the plastic container- I like the using the type in plastic container as it is a stronger flavor)

4 Eggs beaten

Salt and Pepper to taste

Preheat oven to 350 degrees. Lightly oil a 7 x 11 baking dish.

Mix all ingredients well, pour into baking dish. Bake for about 25 minutes until lightly brown. I usually bake it a little longer than this but of course your oven may be different.
