Baked Oatmeal

I have a confession to make – this is not from my recipe file. I was browsing breakfast recipes ( can’t help myself) and came across this one. We all love it and even though I have only had the recipe since 01/18 I have made it MANY times. I really do not like regular oatmeal. The taste, the feel etc- so I was surprised that I liked this. It ends up tasting like a soft granola like muffin. The recipe is very simple but it is very versatile. We have had it several ways – with Craisins- with a little orange zest and cherry Craisins- with dates- with nuts and without nuts- with cinnamon, nutmeg, and allspice. But our favorite way is with dates, pecans, and apples. I would not count on this as a main dish for a special brunch -BUT if you had house guests for a few days and wanted to have something as a special option they could warm up quickly- they would kiss you. The kids like it because it is something they can scoop into a bowl and warm up while they are getting ready for school. I eat it for dinner sometimes ( okay many times) when I do not want anything heavy.
NOTE: I am giving you the basic recipe and then our favorite version. The recipe does not specify whether to use regular oatmeal or quick cooking oats ( 1 minute oats) . We have tried both and find a combo makes a good texture. I also use a combo of buttermilk and 1% milk. You may need to adjust milk or oats depending on which variety you choose.
BAKED OATMEAL
3 Cups Oatmeal ( I use 2 Cups Regular oats and 1 Cup 1 minute Oats)
3/4 Cup Packed Brown Sugar
1/2 Cup Butter Melted (cooled)
2 Eggs
2 Cups Milk ( I use 1 Cup 1% Milk and 1 cup Buttermilk)
2 Teaspoons Baking Powder
1 Teaspoon Salt
* I add 1 Cup Chopped Dates, 1 Peeled Diced Apple ( I am a Fuji advocate) , and 1 Cup Chopped Pecans
Preheat oven to 375 degrees. Butter OR spray 13 x 9 baking pan with cooking spray.
Mix melted butter and brown sugar in a large bowl, beat in eggs until well blended. Add oats, salt and baking powder and mix well. Stir in milk.
Pour into the prepared pan and bake approximately 25-30 minutes. It should be slightly browned on top and set like a muffin (However when you spoon it into a serving bowl it does not hold together completely like a muffin- it looks more like a soft granola).
